One Pan Creamy Tortellini with Smoked Sausage

Ingredients

  • olive oil
  • 1 pound smoked sausage
  • 1/2 cup white onion
  • 1 clove garlic
  • 20 ounces cheese tortellini
  • 28 ounces crushed tomatoes or whole tomatoes
  • 1 cup low sodium chicken broth
  • salt and pepper
  • 2 tablespoons cream cheese
  • 1 cup sharp cheddar cheese
  • 1 cup jack cheese
  • fresh parsley

Preparation

  1. Heat a tablespoon of olive oil in a large, deep skillet over medium heat.

  2. Add onion and cook, stirring often, until softened, about 3-4 minutes.

  3. Stir in minced garlic and cook for 30 seconds.

  4. Add sausage and cook until browned on both sides.

  5. Stir in chicken broth, tortellini, tomatoes, and a pinch of salt and pepper.

  6. Bring to a boil, stirring often.

  7. Turn heat to low, cover, and simmer for 10 to 15 minutes, or until pasta is tender, stirring at least once to prevent sticking.

  8. Alternatively, for a quicker method, cook uncovered over medium-low heat, stirring often, for 8 to 10 minutes.

  9. If there is too much liquid in the pan, spoon some out, leaving enough for the sauce.

  10. Remove from heat and stir in the cheeses, reserving a handful for topping.

  11. Cover and let stand for 5 to 10 minutes, or broil for 2 to 3 minutes to brown the top.

  12. Garnish with fresh parsley, if desired.
