One Pan Creamy Tortellini with Smoked Sausage
Ingredients
- olive oil
- 1 pound smoked sausage
- 1/2 cup white onion
- 1 clove garlic
- 20 ounces cheese tortellini
- 28 ounces crushed tomatoes or whole tomatoes
- 1 cup low sodium chicken broth
- salt and pepper
- 2 tablespoons cream cheese
- 1 cup sharp cheddar cheese
- 1 cup jack cheese
- fresh parsley
Preparation
Heat a tablespoon of olive oil in a large, deep skillet over medium heat.
Add onion and cook, stirring often, until softened, about 3-4 minutes.
Stir in minced garlic and cook for 30 seconds.
Add sausage and cook until browned on both sides.
Stir in chicken broth, tortellini, tomatoes, and a pinch of salt and pepper.
Bring to a boil, stirring often.
Turn heat to low, cover, and simmer for 10 to 15 minutes, or until pasta is tender, stirring at least once to prevent sticking.
Alternatively, for a quicker method, cook uncovered over medium-low heat, stirring often, for 8 to 10 minutes.
If there is too much liquid in the pan, spoon some out, leaving enough for the sauce.
Remove from heat and stir in the cheeses, reserving a handful for topping.
Cover and let stand for 5 to 10 minutes, or broil for 2 to 3 minutes to brown the top.
Garnish with fresh parsley, if desired.
