Oriental Style Kimchi Fried Rice

Ingredients

  • Cooking oil, as needed
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, diced
  • 1 medium carrot, julienned
  • 2 garlic cloves, chopped
  • 2 cups cooked white rice (preferably day-old)
  • 1 tablespoon sriracha
  • 1/2 cup kimchi
  • 4 large portobello mushrooms, sliced
  • Soy sauce to taste
  • Sesame oil to taste
  • Sesame seeds to taste
  • Salt and black pepper to taste

Optional

  • Fried egg (optional)

Preparation

  1. Sauté the onion in oil for a few minutes.

  2. Add garlic, carrot, and bell pepper. Cook on low heat for a few minutes, stirring occasionally, until vegetables are tender.

  3. Add kimchi and mushrooms, and mix well.

  4. Add rice, soy sauce, sriracha, and season with salt and pepper. Mix and let cook for a few minutes to intensify flavors.

Tips

  1. Optionally, add a fried egg, sesame seeds, and a drizzle of sesame oil on top for a Korean-style finish.

  2. For a milder version, use non-spicy kimchi such as purple cabbage kimchi or omit it altogether if you've never tried it before.
