Quick and Easy Veggie Curry
Ingredients
- 1 small onion diced
- 3 garlic cloves minced
- 1 red bell pepper thinly sliced
- 1/2 cup chopped carrot
- 2 handfuls of spinach {sub for any leafy green}
- 1 small head of a cauliflower cut into florets
- 3 tbsp @thaikitchen red curry paste
- 1 can @chasorganics coconut milk
- 1/2 cup veggie broth
- Sprinkle of sea salt, pepper & chili flakes
- Green onion for garnish
Preparation
Sauté onion, garlic and carrots in olive oil with a sprinkle of salt for 4 minutes.
Add pepper and cauliflower and cook for another minute or so.
Add curry paste and toss veggies.
Add coconut milk and broth.
Bring to a simmer, cover and cook for 10 minutes.
Stir in spinach and let cook for 2 more minutes.
Serve with rice and sprinkle of green onion and chili flakes.
Tips
Vegetable options are endless and can be substituted with any leafy greens.
You can add proteins like chicken, shrimp, or chickpeas for variation.
Ideal for a comforting meatless meal and pairs well with rice or homemade garlic naan.
