Simple Vegan Banana Pancakes

Ingredients

  • 2/3 cup all-purpose flour
  • 1 banana
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • about 1/3 cup plant milk

Toppings

  • coconut yogurt
  • banana
  • blueberries
  • maple syrup
  • powdered salted caramel peanut butter mixed with plant milk

Preparation

  1. Mash the banana.

  2. In a bowl, mix the flour and baking powder.

  3. Add the mashed banana, vanilla extract, and plant milk to form a batter.

  4. Heat a pan over medium heat and grease it lightly.

  5. Pour batter onto the pan to form pancakes and cook until bubbles appear, then flip and cook until golden brown.

  6. Serve with coconut yogurt, banana slices, blueberries, maple syrup, and the peanut butter mixture.
