Spiralized Zucchini Salad with Lemon Vinaigrette
Ingredients
Salad
- 1 small zucchini
- 1 small yellow squash
- cherry tomatoes
- @saffronroadfood crispy chickpeas
- toasted pine nuts
- @organicgirl baby arugula
- fresh basil, chopped
- fresh chives, chopped
- @violife_foods vegan feta (optional)
Lemon pine nut vinaigrette
- 1/4 c EVOO
- 1/4 c @bragglivefoodproducts ACV
- 1 lemon juiced
- 1 tbsp @justdatesyrup
- 1/2 tsp dried basil
- 1/2 tsp garlic powder
- 1 TBSP Dijon mustard
- 2 tsp pine nuts, ground/puréed
Preparation
Using the ribbon blade of a spiralizer or a regular vegetable peeler, create zucchini and yellow squash ribbons! Transfer to bowl.
Add the rest of the salad ingredients in with the zucchini and toss to combine.
Add pine nuts to a Vitamix blender and pulse until finely minced. Pour in the other vinaigrette ingredients and pulse until well combined.
Toss salad with vinaigrette and top with extra crispy chick peas if desired!
