Turmeric and Coconut Curry for Lazy Evenings

Ingredients

  • 1 tbsp turmeric
  • 1 tbsp cumin
  • 1 tsp curry powder
  • 1/2 tsp fennel seeds
  • 1 tbsp coconut oil
  • 1 finely chopped onion
  • 1 large courgette (quartered)
  • 1 red chilli
  • 3 cloves minced garlic
  • 1 tin coconut milk
  • 1/2 pack coconut cream
  • large pinch of salt and pepper
  • 1 small precooked (cubed) butternut squash
  • fluffy white rice
  • coconut yogurt
  • cashew nuts

Preparation

  1. Heat 1 tbsp turmeric, 1 tbsp cumin, 1 tsp curry powder and 1/2 tsp fennel seeds.

  2. Add 1 tbsp coconut oil with 1 finely chopped onion.

  3. Add 1 large courgette (quartered) with 1 red chilli.

  4. Add 3 cloves minced garlic and fry for a minute longer.

  5. Once cooked, add 1 tin coconut milk and 1/2 pack coconut cream.

  6. Add large pinch of salt and pepper and add 1 small precooked (cubed) butternut squash.

  7. Taste test after 20 minutes then add more spice where needed.

  8. Serve with fluffy white rice and top with coconut yogurt and cashew nuts.
