Vegan Avocado Pasta
Ingredients
- 200g spaghetti
- 2 ripe avocados
- 2 cloves garlic
- 1/2 lemon, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Preparation
Cook the spaghetti according to package directions until al dente.
In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, salt, and pepper; blend until smooth to make the sauce.
Drain the cooked pasta and immediately toss it with the avocado sauce.
Garnish with fresh basil leaves and serve right away.
