Vegan Avocado Pasta

Ingredients

  • 200g spaghetti
  • 2 ripe avocados
  • 2 cloves garlic
  • 1/2 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Preparation

  1. Cook the spaghetti according to package directions until al dente.

  2. In a blender or food processor, combine avocados, garlic, lemon juice, olive oil, salt, and pepper; blend until smooth to make the sauce.

  3. Drain the cooked pasta and immediately toss it with the avocado sauce.

  4. Garnish with fresh basil leaves and serve right away.
