Vegan Chicken Stir-Fry with Satay Sauce

Ingredients

  • carrot
  • baby corn
  • red onion
  • garlic
  • courgette
  • broccoli
  • nakedgloryuk roast tenderstrips

Satay sauce

  • 1/2 can coconut milk
  • 1 tbsp curry powder
  • 1/2 lime juiced
  • 1 tsp maple syrup
  • 1 tbsp soy sauce
  • 3 tbsp peanut butter

Preparation

  1. Mix all satay sauce ingredients together in a saucepan and simmer for a couple of minutes.

  2. Heat oil in a pan over medium heat

  3. Add the stir-fry ingredients and cook until vegetables are tender and tenderstrips are heated through

  4. Pour the satay sauce over the stir-fry and stir to combine

  5. Serve with wholegrain rice and no duck spring rolls
