Vegan Chicken Stir-Fry with Satay Sauce
Ingredients
- carrot
- baby corn
- red onion
- garlic
- courgette
- broccoli
- nakedgloryuk roast tenderstrips
Satay sauce
- 1/2 can coconut milk
- 1 tbsp curry powder
- 1/2 lime juiced
- 1 tsp maple syrup
- 1 tbsp soy sauce
- 3 tbsp peanut butter
Preparation
Mix all satay sauce ingredients together in a saucepan and simmer for a couple of minutes.
Heat oil in a pan over medium heat
Add the stir-fry ingredients and cook until vegetables are tender and tenderstrips are heated through
Pour the satay sauce over the stir-fry and stir to combine
Serve with wholegrain rice and no duck spring rolls
