Vegan Ricotta Peach Toast
Ingredients
- 1/2 cup tofu
- 2 teaspoons nutritional yeast
- 3 teaspoons lemon juice
- Salt to taste
- 1 tablespoon olive oil
- 1 peach
- Balsamic glaze
- A few Italian basil leaves
Preparation
Press the tofu and blend it with nutritional yeast, lemon juice, and salt until smooth to make vegan ricotta, then set aside.
Score the peaches to create grill lines and grill them in a pan with olive oil until caramelized.
Toast the bread.
Spread the vegan ricotta on the toasted bread, top with grilled peaches, drizzle with balsamic glaze, and add basil leaves.
