Vegan Shortbread Caramel Bars
Ingredients
- 1/2 cup + 1/4 cup vegan margarine
- 3 tbsp sugar
- 1 cup flour
- 1/4 cup brown sugar
- 2 tbsp corn syrup
- 1/4 cup coconut milk
- A pinch of salt
- 1/4 cup vegan chocolate
Preparation
Combine 1/2 cup margarine, sugar, and flour together until it becomes crumbly.
Press dough into a parchment-lined baking dish and bake in a preheated oven at 350 degrees F for 20 minutes.
While the crust is baking, bring 1/4 cup margarine, brown sugar, corn syrup, coconut milk, and a pinch of salt to a boil in a pot over medium-high heat.
Let it boil for 5 minutes while stirring constantly.
Remove from heat and continue to stir for an additional 3 minutes until the caramel starts to thicken.
Pour the caramel over the crust and let it set in the refrigerator for at least 4 hours.
After the caramel has set, melt the chocolate.
Spread the melted chocolate on top of the caramel.
Let it set in the refrigerator until the chocolate hardens.
Cut into 1-inch squares.
