Vegan Shortbread Caramel Bars

Ingredients

  • 1/2 cup + 1/4 cup vegan margarine
  • 3 tbsp sugar
  • 1 cup flour
  • 1/4 cup brown sugar
  • 2 tbsp corn syrup
  • 1/4 cup coconut milk
  • A pinch of salt
  • 1/4 cup vegan chocolate

Preparation

  1. Combine 1/2 cup margarine, sugar, and flour together until it becomes crumbly.

  2. Press dough into a parchment-lined baking dish and bake in a preheated oven at 350 degrees F for 20 minutes.

  3. While the crust is baking, bring 1/4 cup margarine, brown sugar, corn syrup, coconut milk, and a pinch of salt to a boil in a pot over medium-high heat.

  4. Let it boil for 5 minutes while stirring constantly.

  5. Remove from heat and continue to stir for an additional 3 minutes until the caramel starts to thicken.

  6. Pour the caramel over the crust and let it set in the refrigerator for at least 4 hours.

  7. After the caramel has set, melt the chocolate.

  8. Spread the melted chocolate on top of the caramel.

  9. Let it set in the refrigerator until the chocolate hardens.

  10. Cut into 1-inch squares.
