Vegan Taco Bowl with Walnut Taco Meat
Ingredients
- 1, 15oz can black beans, rinsed and drained
- 1 1/2 cups walnuts, chopped
- 1 tsp cumin
- 1 tsp sazón (I used @eatloisa)
- 1/2 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Pinch of kosher salt and pepper
- 2 chipotle peppers canned in adobo sauce (you can add a little bit of the sauce too)
Preparation
Preheat oven to 375°F (190°C).
In a bowl, combine black beans, chopped walnuts, cumin, sazón, ground coriander, smoked paprika, garlic powder, kosher salt, and pepper. Mix well.
Spread the mixture evenly on a baking tray and place it in the preheated oven for 15-20 minutes. Allow to cool.
Transfer the cooled mixture to a food processor and pulse until the mixture resembles grounds.
When ready to serve, sauté the walnut taco meat in a little oil to warm it up.
Serve the walnut taco meat in taco shells or in a bowl with your desired toppings.
