Easy Peanut Butter Tofu Stir Fry Noodles
Ingredients
- 1 block of tofu
- 3 tbsp soy sauce
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- 1 garlic clove
- 2 tbsp sesame oil
- 1 carrot
- 1 pepper
- 3 spring onions
- Rice noodles
- Sesame seeds
- Lime juice
- Fresh coriander
- Additional soy sauce for serving
Preparation
Chop 1 block of tofu into cubes
Spread the tofu cubes onto a baking tray covered with baking paper
Bake for 25 minutes
Make the sauce by mixing in a bowl: 3 tbsp soy sauce, 1 tbsp peanut butter, 1 tbsp maple syrup, 1 crushed garlic clove, and 2 tbsp sesame oil
Remove the tofu from the oven and toss it into the bowl with the sauce
Add the tofu to a frying pan with half of the sauce
Add 1 finely chopped carrot, 1 pepper, and 3 spring onions, then cook for 5-8 minutes
Meanwhile, cook the rice noodles separately according to package instructions
Add the cooked noodles to the pan with the remaining sauce
Mix everything together and serve with sesame seeds, lime juice, soy sauce, and fresh coriander if available
Optional: Use other vegetables like broccoli, cabbage, mushrooms, or pak choi for variations
