Easy Peanut Butter Tofu Stir Fry Noodles
Ingredients
- 1 block tofu
- rice noodles
Sauce
- 3 tbsp soy sauce
- 1 tbsp peanut butter
- 1 tbsp maple syrup
- 1 garlic clove
- 2 tbsp sesame seed oil
Vegetables
- 1 carrot
- 1 pepper
- 3 spring onions
Garnish
- sesame seeds
- lime juice
- soy sauce
- fresh coriander
Preparation
Chop tofu into cubes
Spread tofu cubes on a baking tray lined with baking paper
Bake for 25 minutes
In a bowl, mix soy sauce, peanut butter, maple syrup, garlic, and sesame seed oil to make the sauce
Remove tofu from oven and toss with the sauce
Add tofu and half of the sauce to a frying pan
Add carrots, pepper, and spring onions; cook for 5-8 minutes
Meanwhile, cook rice noodles according to package instructions
Add cooked noodles to the pan with the remaining sauce
Mix everything together
Serve with sesame seeds, lime juice, soy sauce, and fresh coriander
Tips
You can substitute vegetables with broccoli, cabbage, mushrooms, or bok choy
