Peanut Tofu Noodle Bowl
Ingredients
- Cooked tofu
- Cooked noodles or rice
Sauce
- 2 tablespoons smooth peanut butter
- 2 cloves garlic, minced
- A handful of spring onions, chopped
- 1 teaspoon dark soy sauce
- 1 teaspoon rice vinegar
- 1 teaspoon maple syrup
- Black pepper and chilli flakes to taste
- Sesame seeds to taste
- Hot water as needed
Preparation
Cook the tofu beforehand in an air fryer or fry in a pan.
Combine all sauce ingredients in a bowl and use enough hot water to reach a consistency you like, about 3 tablespoons.
Keep stirring until the sauce is smooth and taste, adjusting by adding more peanut butter or sweetener if needed.
Cook noodles of your choice, drain, and stir half the sauce through.
Add the rest of the sauce to the cooked tofu and coat it.
Serve together with some greens of choice, such as crispy cucumber.
