Honey Bbq Tofu Bowl with Mango Dressing
Ingredients
Mango dressing
- 1 ripe mango, diced
- 1/4 cup almond milk
- 1/2 tsp ginger powder
- 2 tbsp rice vinegar
- 1 1/2 tbsp sesame oil
- 1 small garlic clove
- salt to taste
Honey bbq tofu
- 1 block (450g) firm tofu
- 1/2 cup cornstarch
- 1/2 cup BBQ sauce
- 2 tbsp agave syrup or maple syrup
- 2 tbsp oil
Preparation
Blend the mango dressing ingredients until smooth and add salt to taste.
Cut tofu into bite-size triangle pieces.
Coat tofu with cornstarch.
Fry tofu in hot oil until lightly crispy on all sides and set aside.
Heat 2 tablespoons of oil in a pan.
Add agave syrup and BBQ sauce and stir until reduced to a sticky consistency with bubbles.
Mix in the crispy tofu pieces until they are all coated.
Turn the burner to high heat and move the tofu around quickly to char, keeping a close eye to avoid burning.
Tips
Add more sauce at the end if you want it extra saucy.
