Savoury Garlic Sauce with Enoki Mushrooms, Soba Noodles, and Tofu
Ingredients
Savoury garlic sauce
- 2 garlic cloves finely chopped
- 2 small green onions finely chopped
- 2 tbsp light Japanese soy sauce
- 1 tbsp rice vinegar
- 1 tsp agave syrup
- 1/2 tbsp sesame oil
Mushrooms, noodles, and tofu
- 150 g enoki mushrooms, trimmed and separated into smaller bunches
- 2 bunches / ~150 g soba noodles
- 200 g crispy pre-fried tofu, air-fried & cut in smaller pieces
Garnish
- coriander
- sesame seeds
Preparation
Cook soba noodles according to package instructions, rinse well in cold water, drain and then mix in 1 tsp sesame oil. Put to the side.
Blanch the enoki mushrooms in boiling water for 30-45 seconds and then drain them.
Mix all sauce ingredients together, heat a pan and pour in the sauce, stir for about 10 seconds then add the enoki mushrooms, pour the sauce over them with a spoon and let cook for 1-2 minutes.
Place some soba noodles in bowls, top with the enoki mushrooms and some of the sauce, crispy tofu, coriander and sesame seeds.
Notes
Tofu can be prepared in any preferred way, such as air-frying or other methods.
