Spicy Glass Noodle Stir Fry with Tofu

Ingredients

  • 1 onion
  • 1 large carrot
  • 1/2 red pepper
  • 1/3 cauliflower
  • 1 package of tofu (270 g)
  • 150 g rice noodles
  • coconut oil

Sauce

  • 1 dl water
  • 0.5 dl teriyaki sauce
  • 1 tbsp panang curry paste
  • 1 tbsp peanut butter
  • 2 tbsp soy sauce
  • salt and pepper

Preparation

  1. Fry the chopped tofu in coconut oil until crispy, then add teriyaki sauce and set aside.

  2. Chop all the vegetables into small cubes.

  3. In a wok pan, fry the onion and carrot in oil.

  4. Add the remaining vegetables and tofu, and fry for a few minutes.

  5. Stir together the sauce ingredients in a bowl and add to the stir fry.

  6. Soak the glass noodles in water for a few minutes and add them to the stir fry.

  7. Combine everything and serve.
