Spicy Glass Noodle Stir Fry with Tofu
Ingredients
- 1 onion
- 1 large carrot
- 1/2 red pepper
- 1/3 cauliflower
- 1 package of tofu (270 g)
- 150 g rice noodles
- coconut oil
Sauce
- 1 dl water
- 0.5 dl teriyaki sauce
- 1 tbsp panang curry paste
- 1 tbsp peanut butter
- 2 tbsp soy sauce
- salt and pepper
Preparation
Fry the chopped tofu in coconut oil until crispy, then add teriyaki sauce and set aside.
Chop all the vegetables into small cubes.
In a wok pan, fry the onion and carrot in oil.
Add the remaining vegetables and tofu, and fry for a few minutes.
Stir together the sauce ingredients in a bowl and add to the stir fry.
Soak the glass noodles in water for a few minutes and add them to the stir fry.
Combine everything and serve.
