Simple Vegan Peanut Butter Noodle Stir-Fry

Ingredients

  • 150 g glass noodles
  • 1 block of tofu (270g)
  • 1/2 onion
  • 1 red pepper
  • 1 carrot
  • 1/2 head of broccoli

Sauce

  • 1 dl hot water
  • 2 tbsp peanut butter
  • 3 tbsp sweet soy sauce
  • salt and pepper

Preparation

  1. Mix all the sauce ingredients in a bowl and set aside.

  2. Chop veggies and tofu into smaller pieces.

  3. Add the onion and tofu to a pan with some oil and fry for a few minutes.

  4. Meanwhile soak the glass noodles in water.

  5. Add the rest of the veggies to the pan and fry for a few more minutes.

  6. Lower the heat, add the noodles and the sauce and mix everything together!

  7. Serve in a bowl and garnish with spring onions and peanuts.
