Simple Vegan Peanut Butter Noodle Stir-Fry
Ingredients
- 150 g glass noodles
- 1 block of tofu (270g)
- 1/2 onion
- 1 red pepper
- 1 carrot
- 1/2 head of broccoli
Sauce
- 1 dl hot water
- 2 tbsp peanut butter
- 3 tbsp sweet soy sauce
- salt and pepper
Preparation
Mix all the sauce ingredients in a bowl and set aside.
Chop veggies and tofu into smaller pieces.
Add the onion and tofu to a pan with some oil and fry for a few minutes.
Meanwhile soak the glass noodles in water.
Add the rest of the veggies to the pan and fry for a few more minutes.
Lower the heat, add the noodles and the sauce and mix everything together!
Serve in a bowl and garnish with spring onions and peanuts.
