Veggie Stir Fry with Tofu

Ingredients

Baked tofu

  • 1 block tofu
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • mushrooms
  • onion
  • broccoli
  • bell pepper
  • 2 tbsp water
  • tamari
  • 1 tbsp sweet chili sauce

Preparation

Baked tofu

  1. Add tofu cubes to a container with the garlic chili sauce, tamari, and nutritional yeast

  2. Seal the container and gently shake to coat the tofu completely

  3. Transfer the coated tofu to a lined baking sheet

  4. Bake at 400°F for 20-25 minutes

Stir fry

  1. Sauté sliced mushrooms and onion in a pan until the onions are translucent

  2. Add broccoli, a splash of tamari, and 2 tablespoons of water

  3. Cover the pan and cook until the broccoli turns bright green, about 4-5 minutes

  4. Add bell pepper, another splash of tamari, and about 1 tablespoon of sweet chili sauce

  5. Sauté until the vegetables are fully coated and most of the liquid has cooked off, about 3 minutes

  6. Add the baked tofu and coat with the sauce

Serving

  1. Serve the stir fry mixture with brown jasmine rice
