Veggie Stir Fry with Baked Tofu

Ingredients

Baked tofu

  • 1 block tofu, drained and pressed
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • sliced mushrooms
  • sliced onion
  • broccoli florets
  • sliced bell pepper
  • 2 splashes tamari
  • 2 tbsp water
  • 1 tbsp sweet chili sauce

Preparation

Baked tofu

  1. Drain and press a block of tofu, then cut into cubes

  2. In a container, combine the tofu cubes with garlic chili sauce, tamari, and nutritional yeast

  3. Seal the container and shake gently to coat the tofu

  4. Transfer the coated tofu to a lined baking sheet

  5. Bake at 400°F for 20-25 minutes, or until golden and crisp

Stir fry

  1. In a pan over medium heat, sauté sliced mushrooms and onion until onions are translucent

  2. Add broccoli florets, a splash of tamari, and 2 tablespoons water. Cover and cook until broccoli turns bright green, about 4-5 minutes

  3. Add sliced bell pepper, another splash of tamari, and sweet chili sauce. Sauté until vegetables are coated and most liquid has cooked off, about 3 minutes

  4. Add the baked tofu to the pan and coat with the sauce. Remove from heat

  5. Serve over cooked brown jasmine rice
