Veggie Stir Fry with Baked Tofu
Ingredients
Baked tofu
- 1 block tofu, drained and pressed
- 2 tsp garlic chili sauce
- 1 tbsp tamari
- 1 tbsp nutritional yeast
Stir fry
- sliced mushrooms
- sliced onion
- broccoli florets
- sliced bell pepper
- 2 splashes tamari
- 2 tbsp water
- 1 tbsp sweet chili sauce
Preparation
Baked tofu
Drain and press a block of tofu, then cut into cubes
In a container, combine the tofu cubes with garlic chili sauce, tamari, and nutritional yeast
Seal the container and shake gently to coat the tofu
Transfer the coated tofu to a lined baking sheet
Bake at 400°F for 20-25 minutes, or until golden and crisp
Stir fry
In a pan over medium heat, sauté sliced mushrooms and onion until onions are translucent
Add broccoli florets, a splash of tamari, and 2 tablespoons water. Cover and cook until broccoli turns bright green, about 4-5 minutes
Add sliced bell pepper, another splash of tamari, and sweet chili sauce. Sauté until vegetables are coated and most liquid has cooked off, about 3 minutes
Add the baked tofu to the pan and coat with the sauce. Remove from heat
Serve over cooked brown jasmine rice
