Vegan Spring Rolls with Peanut Sauce
Ingredients
- glass noodles
- red pepper
- mango
- avocado
- carrots
- cucumber
- red cabbage
Peanut butter sauce
- 4 tbsp peanut butter
- 1 dl hot water
- 1 tbsp agave syrup
- 1 tbsp coconut aminos
- a pinch of salt
Preparation
Slice the vegetables and fruits into thin strips for easy rolling.
Cook or soak the glass noodles according to package instructions to soften them.
Dip rice paper wrappers in warm water until pliable, then lay flat.
Assemble the spring rolls by placing a combination of the prepared ingredients in the center of each wrapper and roll tightly to seal.
Blend all the peanut butter sauce ingredients together in a bowl until the sauce is smooth.
