Fresh Tofu Spring Rolls with Peanut Sauce
Ingredients
- 12 rice papers
- 14 oz tofu cubes
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1 scallion, sliced
- 1 cup fresh cilantro leaves
- 1 avocado, sliced
- 1/2 red mango, peeled and sliced
Peanut sauce
- 1/2 cup peanut butter
- 1/2 cup plant milk
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon lime juice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1 teaspoon red curry paste
Preparation
Peanut sauce
Put all ingredients in a blender and blend until smooth.
Spring roll assembly
Wet the rice paper.
Add the ingredients close to the bottom of the wrapper, leaving a little space on the bottom and sides.
Tuck the sides in and then start rolling from the bottom, tucking in the fillings with your fingers as you roll.
