Fresh Tofu Spring Rolls with Peanut Sauce

Ingredients

  • 12 rice papers
  • 14 oz tofu cubes
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 scallion, sliced
  • 1 cup fresh cilantro leaves
  • 1 avocado, sliced
  • 1/2 red mango, peeled and sliced

Peanut sauce

  • 1/2 cup peanut butter
  • 1/2 cup plant milk
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 teaspoon red curry paste

Preparation

Peanut sauce

  1. Put all ingredients in a blender and blend until smooth.

Spring roll assembly

  1. Wet the rice paper.

  2. Add the ingredients close to the bottom of the wrapper, leaving a little space on the bottom and sides.

  3. Tuck the sides in and then start rolling from the bottom, tucking in the fillings with your fingers as you roll.

Notes

  1. This recipe makes 12 spring rolls.
