Peanut Butter Noodle Stir-Fry

Ingredients

  • rice noodles or noodles of choice
  • red onion
  • garlic
  • tofu
  • peanut butter
  • soya sauce
  • pinch of syrup
  • some lime juice
  • grated ginger
  • chilli flakes or sambal oelek
  • salt
  • water or oat cream (for thinning)
  • spring onion (for topping)
  • crushed nuts (for topping)

Preparation

  1. Boil rice noodles or noodles of choice.

  2. Fry red onion, garlic, and tofu until crispy.

  3. In a bowl, mix together peanut butter, soya sauce, a pinch of syrup, some lime juice, grated ginger, chilli flakes or sambal oelek, and salt. Add water or oat cream until thinned out.

  4. Add the noodles to the frying pan, pour in the sauce, mix well, and top with spring onion and crushed nuts.

Tips

  1. This dish can be prepared in under 20 minutes and is ideal for a healthy vegan meal.
