Easy Plant-Based Sausage Pasta

Ingredients

  • 4 tbsp olive oil (divided)
  • 1 yellow onion, thinly sliced
  • 1/4 cup dry white wine
  • 3 cloves minced garlic
  • 1 red bell pepper, thinly sliced
  • 2 @fieldroast Italian Sausages, sliced on a bias
  • 3 cups baby kale
  • 1 tsp salt, divided
  • 1/2 tsp red pepper flakes
  • 6-8 oz pasta of choice
  • Fresh basil for topping

Preparation

  1. Bring a pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup pasta cooking water.

  2. Heat a skillet over medium heat and add 2 tbsp olive oil. Add onions and sauté 5-7 mins, until they start to soften. Add 1/2 tsp of salt and white wine. Continue cooking for 5 minutes, until onions are browned.

  3. Add garlic, bell pepper and sausages and continue cooking 5-7 minutes, until peppers are tender and sausages are browned.

  4. Add remaining salt, remaining 2 tbsp olive oil, red pepper flakes, kale and pasta. Toss until kale is wilted. Serve with fresh basil.
