Simple and Quick Pasta Arrabbiata Dish
Ingredients
- 400g of pasta of choice
- 2 tbsp olive oil
- 4 cloves garlic peeled & chopped
- 1 fresh red chilli chopped finely (half if you don’t like too much heat)
- 400g tinned chopped tomatoes
- 4 tbsp tomato puree
- 2 tsp balsamic vinegar
- 1/2 tsp salt
- 1 tsp black pepper
- Handful of fresh basil to serve
Preparation
Cook the pasta as per instructions with a pinch of salt until slightly al dente, drain and rinse, and keep a cup of pasta water to one side.
Heat a saucepan on medium heat and add the oil.
Add the chilli and heat for around 1 minute.
Add the chopped garlic and cook for 1 minute, making sure not to burn it.
Add the chopped tomatoes and tomato puree, mix together, and cook for 5 minutes stirring occasionally.
Add the balsamic vinegar and season with salt and ground black pepper.
Add the pasta to the sauce, coat the pasta in the sauce mixing well, and add a splash of the saved pasta water bit by bit if the sauce is too thick.
Add the basil to the top and serve up.
Tips
Mix 1/2 cup of nutritional yeast through if you fancy a cheesy taste.
Top with vegan Parmesan.
Drain pasta through with cold water to stop the cooking process, then when ready to add back to the pan, rinse through with hot or boiling water.
