Spicy Italian Arrabbiata Pasta with Herbs
Ingredients
- Pasta
- 1 onion
- 4-6 garlic cloves
- 4 dried tomatoes
- Olive oil
- Chilli oil
- 1 chilli
- Salt, pepper
- 1/4 pack plantbased cream
- 2tb tomato puree
- 4 tomatoes
- 2tb tomato pesto
- 1/2 handful basil
- 1/2 handful parsley
- Dash of white wine
Preparation
Cook your pasta
Chop onion, garlic and chilli
Fry in oil
Chop tomatoes and add to the pan
Add a good amount of chilli oil depending on how spicy you like it
Add salt, pepper and tomato puree
Add a cup of pasta water
Add tomato pesto
Simmer for about 10 minutes
Take all out
Puree with a mixer
Put back on the stove
Add the wine and cream
Simmer for a couple more minutes
Spice with salt and pepper
Chop parsley and basil
Serve pasta with sauce and parsley and basil on top
