Simple Olive and Tomato Pasta Dish

Ingredients

  • 1 garlic clove
  • Handful green pitted olives
  • 3 handful cherry tomatoes
  • 1 handful dried tomatoes
  • Olive oil
  • Splash red wine
  • 3 onions
  • 2 handful basil
  • 3 portions pasta
  • Salt, pepper
  • Zest of 1/2 lemon

Preparation

  1. Cook the pasta

  2. Add a good amount of oil to a pot

  3. Chop the onions and garlic

  4. Glaze in the oil

  5. Add all cherry tomatoes (don’t cut them)

  6. Add the olives

  7. Chop the dried tomatoes

  8. Add to the pot

  9. Add 2 cups of the pasta water

  10. Cook for 15-20 minutes until tomatoes are really soft

  11. Add a splash of red wine and lemon zest

  12. Season with salt and pepper

  13. Cook a couple more minutes

  14. Mix with the pasta

  15. Chop the basil

  16. Mix half of the basil in the pasta

  17. Serve with the rest of the basil on top
