Simple Olive and Tomato Pasta Dish
Ingredients
- 1 garlic clove
- Handful green pitted olives
- 3 handful cherry tomatoes
- 1 handful dried tomatoes
- Olive oil
- Splash red wine
- 3 onions
- 2 handful basil
- 3 portions pasta
- Salt, pepper
- Zest of 1/2 lemon
Preparation
Cook the pasta
Add a good amount of oil to a pot
Chop the onions and garlic
Glaze in the oil
Add all cherry tomatoes (don’t cut them)
Add the olives
Chop the dried tomatoes
Add to the pot
Add 2 cups of the pasta water
Cook for 15-20 minutes until tomatoes are really soft
Add a splash of red wine and lemon zest
Season with salt and pepper
Cook a couple more minutes
Mix with the pasta
Chop the basil
Mix half of the basil in the pasta
Serve with the rest of the basil on top
