Fluffy Blueberry Poppy Seed Pancakes

Ingredients

  • 100g flour
  • 20g coconut flour
  • 1 tbsp baking powder
  • 2 tbsp coconut blossom sugar
  • 1 tbsp poppy seeds
  • 100ml soy milk
  • 100-150ml sparkling water
  • blueberries

Preparation

  1. Mix 100g flour, 20g coconut flour, 1 tbsp baking powder, 2 tbsp coconut blossom sugar, and 1 tbsp poppy seeds.

  2. Mix in 100ml soy milk and 100-150ml sparkling water to achieve the desired consistency.

  3. Leave the batter to rest for 10 minutes.

  4. Fold in the blueberries.

  5. Cook on medium heat on both sides until golden brown.
