Fluffy Blueberry Poppy Seed Pancakes
Ingredients
- 100g flour
- 20g coconut flour
- 1 tbsp baking powder
- 2 tbsp coconut blossom sugar
- 1 tbsp poppy seeds
- 100ml soy milk
- 100-150ml sparkling water
- blueberries
Preparation
Mix 100g flour, 20g coconut flour, 1 tbsp baking powder, 2 tbsp coconut blossom sugar, and 1 tbsp poppy seeds.
Mix in 100ml soy milk and 100-150ml sparkling water to achieve the desired consistency.
Leave the batter to rest for 10 minutes.
Fold in the blueberries.
Cook on medium heat on both sides until golden brown.
