Vegan Stuffed Crepes with Berry Filling

Ingredients

Crepe

  • 100g organic sifted spelt flour
  • 30 g gluten free flour
  • 1 tablespoon vegan vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon rice sirup
  • 1 egg replacement (I use a chia egg)
  • 160ml almond milk
  • 80ml mineral water (or more)

Filling

  • coconut yogurt
  • fruit powder and berries of choice

Preparation

  1. Mix all crepe ingredients in a bowl and then set aside for about 5 minutes.

  2. Bake the crepes in a pan on medium heat.

  3. Allow crepes to cool slightly before stuffing them with your filling and devouring.
