Vegan Banana Oat Waffles

Ingredients

  • 1 mashed banana
  • 2 tablespoons ground flaxseed meal
  • 1 cup oat flour
  • 1/2 medium zucchini
  • 1.5 scoops vegan banana peanut butter protein powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1.5 cups almond milk

Toppings

  • strawberries
  • almond butter
  • mini vegan chocolate chips

Preparation

  1. Mash the banana

  2. Grate the zucchini if desired, but do not press out liquid for waffles

  3. Combine all ingredients in a bowl to form a batter

  4. Cook the batter in a preheated waffle iron until golden and crisp

  5. Top the waffles with strawberries, almond butter, and mini vegan chocolate chips.
