Vegan Banana Oat Waffles
Ingredients
- 1 mashed banana
- 2 tablespoons ground flaxseed meal
- 1 cup oat flour
- 1/2 medium zucchini
- 1.5 scoops vegan banana peanut butter protein powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- 1.5 cups almond milk
Toppings
- strawberries
- almond butter
- mini vegan chocolate chips
Preparation
Mash the banana
Grate the zucchini if desired, but do not press out liquid for waffles
Combine all ingredients in a bowl to form a batter
Cook the batter in a preheated waffle iron until golden and crisp
Top the waffles with strawberries, almond butter, and mini vegan chocolate chips.
