Easy Baked Oats with Zucchini and Banana

Ingredients

  • 1 cup rolled oats
  • 1 ripe banana
  • 1/2 medium zucchini
  • 2 tablespoons ground flaxseed meal
  • 1 scoop vegan banana peanut butter protein powder
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • creamy almond butter
  • strawberries
  • vegan vanilla coconut yogurt
  • brown rice cacao crisps

Preparation

  1. Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini

  2. Add your zucchini and stir in the remaining ingredients to create your batter (should be the consistency of a thicker overnight oat recipe)

  3. Add to a baking pan or ramekin and bake for 35 minutes at 350°F; cool down for at least 10 minutes before cutting in; baking time will depend on size of dish

  4. Add creamy almond butter, strawberries, vegan vanilla coconut yogurt and brown rice cacao crisps
