Single Serving ZOATmeal Bake
Ingredients
- 1/2 cup rolled oats
- 1 ripe banana (half for recipe, half for topping)
- 1 tablespoon ground flaxseed meal
- 1/2 grated zucchini
- 1 scoop vegan banana PB protein powder
- 1/3 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
Preparation
Mash the banana in a bowl, then add flaxseed meal and a bit of water to thicken while you grate the zucchini.
Add the zucchini and stir in the remaining ingredients to create your batter. It should be the consistency of a thicker overnight oat recipe.
Add to a ramekin with the other half of your banana and chocolatey chips on top, then bake for 30 minutes at 350°F.
Add creamy almond butter.
