Single Serving ZOATmeal Bake

Ingredients

  • 1/2 cup rolled oats
  • 1 ripe banana (half for recipe, half for topping)
  • 1 tablespoon ground flaxseed meal
  • 1/2 grated zucchini
  • 1 scoop vegan banana PB protein powder
  • 1/3 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt

Preparation

  1. Mash the banana in a bowl, then add flaxseed meal and a bit of water to thicken while you grate the zucchini.

  2. Add the zucchini and stir in the remaining ingredients to create your batter. It should be the consistency of a thicker overnight oat recipe.

  3. Add to a ramekin with the other half of your banana and chocolatey chips on top, then bake for 30 minutes at 350°F.

  4. Add creamy almond butter.
