Chocolate Chip Banana Pancakes
Ingredients
- 1 cup almond milk
- 2 cups rolled oats
- 1 tbsp baking powder
- 1/4-1/3 cup dark chocolate chunks
- 1 ripe banana
Preparation
Blend all ingredients in a blender until thick and creamy (add more oats if batter is thin
Should be pourable but not super liquidy)
Pour 1/3 cup batter into a nonstick cooking pan over medium heat (add a tsp of coconut oil to achieve that golden color)
Cook until edges become matte and a few bubbles form
Flip
Sprinkle over a few dark chocolate chips
Cook until bottom side is golden brown
