Chocolate Chip Banana Pancakes

Ingredients

  • 1 cup almond milk
  • 2 cups rolled oats
  • 1 tbsp baking powder
  • 1/4-1/3 cup dark chocolate chunks
  • 1 ripe banana

Preparation

  1. Blend all ingredients in a blender until thick and creamy (add more oats if batter is thin

  2. Should be pourable but not super liquidy)

  3. Pour 1/3 cup batter into a nonstick cooking pan over medium heat (add a tsp of coconut oil to achieve that golden color)

  4. Cook until edges become matte and a few bubbles form

  5. Flip

  6. Sprinkle over a few dark chocolate chips

  7. Cook until bottom side is golden brown
