Chocolate Chip Banana Pancakes
Ingredients
- 1 large overly ripe banana, mashed
- 1 c almond milk
- 1 tbsp ACV
- 1 tsp Madagascar Vanilla
- 2 tbsp cashew butter
- 1 c GF 1:1 all purpose flour
- 1 tsp sweetener (optional)
- 1 tbsp baking powder
- pinch of salt
- 1/3 c keto dark chocolate chips (plus more for topping)
Preparation
Add first 5 ingredients to a bowl and stir until combined
Add in all dry ingredients, except chocolate chips. Mix well
Stir in chips
Heat a large cast iron skillet over low heat and spray with coconut oil
Pour 1/4 c of batter for each cake. Cook for 3 minutes or until the batter is slightly bubbly and hole-y on top. Flip and repeat until golden brown on both sides
Serve stacked topped with vegan butter, extra chocolate chips, fresh fruit, and liquid sweetener of choice
