Chocolate Chip Banana Pancakes

Ingredients

  • 1 large overly ripe banana, mashed
  • 1 c almond milk
  • 1 tbsp ACV
  • 1 tsp Madagascar Vanilla
  • 2 tbsp cashew butter
  • 1 c GF 1:1 all purpose flour
  • 1 tsp sweetener (optional)
  • 1 tbsp baking powder
  • pinch of salt
  • 1/3 c keto dark chocolate chips (plus more for topping)

Preparation

  1. Add first 5 ingredients to a bowl and stir until combined

  2. Add in all dry ingredients, except chocolate chips. Mix well

  3. Stir in chips

  4. Heat a large cast iron skillet over low heat and spray with coconut oil

  5. Pour 1/4 c of batter for each cake. Cook for 3 minutes or until the batter is slightly bubbly and hole-y on top. Flip and repeat until golden brown on both sides

  6. Serve stacked topped with vegan butter, extra chocolate chips, fresh fruit, and liquid sweetener of choice
