Fluffy Cold Brew Mocha Pancakes

Ingredients

  • 2/3 cup chickpea flour
  • 1 tbsp flaxseed
  • pinch of salt
  • 1/2 tsp baking powder
  • 1/2 very ripe banana, mashed
  • ~100 ml Califia Farms almond milk cold brew coffee
  • 1.5 tbsp sweetener (maple syrup/sugar/other)
  • small squeeze of lemon
  • 1 tbsp cocoa powder

Preparation

  1. Mix the chickpea flour, flaxseed, salt and baking powder

  2. Stir in the mashed banana and cold brew coffee, but don’t add it in all at once

  3. Whisk in the sweetener and lemon

  4. Fry half your batter (3 pancakes) and cook both sides until golden

  5. Meanwhile, whisk in the cocoa powder into the remaining batter

  6. Cook the remaining batter (makes about 4 pancakes) until cooked both sides
