Delicious and Fluffy Vegan Pancakes

Ingredients

  • 1/2 cup spelt flour
  • 1 slightly heaped teaspoon baking powder
  • pinch of salt
  • 125mls / 1/2 cup + 1 teaspoon non-dairy milk
  • 1 teaspoon chia seeds
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract

Preparation

  1. Start by preparing your chia egg by mixing your chia seeds and milk together. Add in your vinegar and vanilla and stir.

  2. In a separate bowl, add in your flour, baking powder and salt. Mix well.

  3. Combine your wet ingredients into your dry ingredients and slowly combine. Leave to rest for 5-10 minutes. Begin to heat your pan.

  4. Cook your pancakes on your pre-heated pan, and get flipping! Once done, serve and enjoy.
