Thai Spiced Cauliflower Pancakes
Ingredients
- 1 small head of cauliflower or 1/2 large cauliflower
- 2/3 cup chickpea flour
- 2/3 cup milk
- 1 tablespoon flaxseed
- 12-25 grams green Thai curry paste
- dash of onion powder
- squeeze of lemon
- 1/2 teaspoon baking powder
- Squeaky Bean vegan Thai chicken-style pieces
Preparation
Chop the cauliflower into florets and boil for about 10 minutes until soft.
Meanwhile, mix the remaining ingredients except for the baking powder and chicken.
Drain and mash the cauliflower.
Fold the mashed cauliflower into the batter and then whisk in the baking powder.
Fry the pancakes until golden on both sides using high heat.
Serve with the chicken-style pieces and other toppings of your choice.
