The Best Buffalo Cauliflower Wrap

Ingredients

  • ezekiel wrap
  • homemade super crispy buffalo wings (recipe below)
  • rocket salad mix
  • smoked tofu
  • sweetcorn
  • guacamole
  • 1 small head of cauliflower
  • 50g white spelt flour (or other)
  • 100ml milk
  • pinch of each: s&p, paprika, garlic powder, onion powder

Preparation

  1. Chop the cauliflower into florets

  2. Mix the flour, s&p, spices & mylk to form a thick batter (thick enough to not run off the cauliflower but not too thin that it doesn’t stick - start with less milk and maybe add more if necessary

  3. Dip the cauliflower into the batter, then into the breadcrumbs and onto a lined baking sheet with baking paper (i didn’t use all the batter, but just make sure all the cauliflower is coated)

  4. Bake for 20-25 mins at fan 180°C

  5. Brush on buffalo sauce (i use franks) mixed with some maple syrup and/or vegan honey (i used both) [or you can dunk/dip the florets in it]

  6. Bake the cauliflower for a further 15-20 mins

  7. Enjoy hot in your wrap (or something else!)
