Vegan Zucchini Oatmeal Bake
Ingredients
- 1c of @quaker rolled oats
- 1 ripe banana (mashed)
- 1 zucchini (grated)
- 2T @bobsredmill ground flaxseed meal
- 1.5 scoop of vegan banana PB Planta protein powder from @highperformancenutrition
- 2/3c almond milk
- 1tsp vanilla extract
- 3/4tsp baking powder
- 1/2tsp cinnamon
- 1/4tsp sea salt
Preparation
Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini
Add your zucchini and stir in the remaining ingredients to create your batter. It should be the consistency of a thicker overnight oat recipe
Add to a baking pan or a ramekin and bake for 35 minutes at 350°F. Cool down for at least 10 minutes before cutting in. Baking time will depend on size of dish
Add creamy almond butter, more strawberries, @onedegreeorganics brown rice crisps, and extra vegan choc chips on top!
