Vegan Zucchini Oatmeal Bake

Ingredients

  • 1c of @quaker rolled oats
  • 1 ripe banana (mashed)
  • 1 zucchini (grated)
  • 2T @bobsredmill ground flaxseed meal
  • 1.5 scoop of vegan banana PB Planta protein powder from @highperformancenutrition
  • 2/3c almond milk
  • 1tsp vanilla extract
  • 3/4tsp baking powder
  • 1/2tsp cinnamon
  • 1/4tsp sea salt

Preparation

  1. Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini

  2. Add your zucchini and stir in the remaining ingredients to create your batter. It should be the consistency of a thicker overnight oat recipe

  3. Add to a baking pan or a ramekin and bake for 35 minutes at 350°F. Cool down for at least 10 minutes before cutting in. Baking time will depend on size of dish

  4. Add creamy almond butter, more strawberries, @onedegreeorganics brown rice crisps, and extra vegan choc chips on top!
