Banana PB ZOATmeal Breakfast Muffins

Ingredients

  • 1 banana
  • 2 tablespoons ground flaxseed meal
  • 1 zucchini
  • 1/2 cup oat flour
  • 1/2 cup rolled oats
  • 1 scoop vegan banana PB protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 cup almond milk
  • vegan chocolate chips

Preparation

  1. Mash the banana in the bottom of your bowl.

  2. Add ground flaxseed meal with a tablespoon of water and let it sit to thicken.

  3. Grate the zucchini using a larger grater and press out excess liquid before mixing.

  4. Add the grated zucchini and all remaining ingredients to the bowl.

  5. Place the mixture in a muffin tray and add vegan chocolate chips.

  6. Bake for 23-25 minutes at 350°F.

  7. Let cool for at least 15 minutes before enjoying to avoid excess moisture from the zucchini.
