Banana PB ZOATmeal Breakfast Muffins
Ingredients
- 1 banana
- 2 tablespoons ground flaxseed meal
- 1 zucchini
- 1/2 cup oat flour
- 1/2 cup rolled oats
- 1 scoop vegan banana PB protein powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 cup almond milk
- vegan chocolate chips
Preparation
Mash the banana in the bottom of your bowl.
Add ground flaxseed meal with a tablespoon of water and let it sit to thicken.
Grate the zucchini using a larger grater and press out excess liquid before mixing.
Add the grated zucchini and all remaining ingredients to the bowl.
Place the mixture in a muffin tray and add vegan chocolate chips.
Bake for 23-25 minutes at 350°F.
Let cool for at least 15 minutes before enjoying to avoid excess moisture from the zucchini.
