Vegan Peanut Butter Cup Zucchini Oatmeal Muffins

Ingredients

  • 1.5c rolled oats
  • 1 ripe banana (mashed)
  • 1 zucchini (grated)
  • 1T cacao powder
  • 2T ground flaxseed meal
  • 1.5 scoops vegan peanut butter cup protein powder
  • 2c almond milk
  • 1tsp vanilla extract
  • 1/2tsp baking powder
  • 1/2tsp cinnamon
  • 1/4tsp sea salt
  • 2T vegan mini chocolate chips

Preparation

  1. Mash the banana in a bowl.

  2. Grate the zucchini into the same bowl, then add the oats, flaxseed meal, and powders.

  3. Add the liquid, then stir in the remaining ingredients and the vegan chocolate chips.

  4. Preheat the oven to 350°F

  5. Scoop the batter into a muffin tray and bake for 20 minutes at 350°F. Cool down for at least 10 minutes before cutting in.

  6. Add raw creamy almond butter or any extra toppings and enjoy.
