Chocolate Maca Baked Oatmeal Cups
Ingredients
- 3 cups rolled oats
- 2 large super ripe bananas
- 1 1/2 cups almond milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1/4 cup cacao powder
- 1 tbsp maca powder
- 1 scoop plant strong unflavoured ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation
Preheat oven to 350 degrees and spray a muffin tin with baking spray
In a large bowl, mash the bananas until almost puréed. add the almond milk and vanilla extract and whisk until combined
Add in the oats, cacao powder, cinnamon, maca powder, and protein (if using) and mix until combined
Divide the batter evenly among the muffin tins and top with mini chocolate chips, if desired
Bake for 20 minutes and allow the cups to cool completely before removing from the tins
