Vegan Banana Protein Pancakes
Ingredients
- 1 banana, mashed
- 2 tablespoons ground flaxseed meal
- 1 cup oat flour
- 2 scoops vegan protein powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- 1.5 cups almond milk
Toppings
- raw creamy almond butter
- maple syrup
- coconut flakes
- mini vegan chocolate chips
Preparation
Mash the banana.
Combine dry ingredients: ground flaxseed meal, oat flour, protein powder, cinnamon, and baking powder in a bowl.
Add mashed banana, apple cider vinegar, and almond milk to the dry ingredients and mix until well combined.
Heat a non-stick skillet or griddle over medium heat.
Pour batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
Top with almond butter, maple syrup, coconut flakes, and chocolate chips.
