Vegan Strawberry Protein Pancakes

Ingredients

  • 1 mashed banana
  • 2 tablespoons ground flaxseed meal
  • 3/4 cup organic buckwheat flour
  • 2 scoops vegan strawberry protein powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon apple cider vinegar
  • 1 1/3 cups almond milk

Toppings

  • raw creamy almond butter drizzle
  • raw vegan strawberry chocolate bar chunks
  • vegan dark chocolate chips

Preparation

  1. Mash the banana

  2. Combine dry ingredients in a bowl: ground flaxseed meal, buckwheat flour, cinnamon, and baking powder

  3. Combine wet ingredients in another bowl: mashed banana, vanilla extract, apple cider vinegar, and almond milk

  4. Mix wet and dry ingredients together to form a batter

  5. Heat a non-stick skillet or griddle over medium heat

  6. Pour batter onto the skillet to form pancakes and cook until bubbles appear, then flip and cook the other side until golden

  7. Serve pancakes topped with almond butter drizzle, strawberry chocolate chunks, and dark chocolate chips
