Vegan Pancakes with Spelt Flour
Ingredients
- 1 banana
- 2 tablespoons ground flaxseed meal
- 3/4 cup spelt flour
- 2 scoops vegan strawberry jam protein powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- 1 1/3 cups almond milk
Toppings
- salted cashew butter
- fresh raspberries
- vegan dark chocolate chips
Preparation
Mash the banana
Combine dry ingredients in a bowl: spelt flour, ground flaxseed meal, protein powder, cinnamon, and baking powder
In another bowl, mix wet ingredients: mashed banana, vanilla extract, apple cider vinegar, and almond milk
Pour wet mixture into dry ingredients and stir until just combined
Heat a skillet over medium heat and lightly grease it
Pour batter onto skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown
Serve pancakes topped with salted cashew butter, fresh raspberries, and vegan dark chocolate chips
