Easy Breakfast Crepes with Tangy Sauce

Ingredients

  • Spelt flour - 1 cup
  • Almond milk - 1 1/2 cup
  • Maple syrup - 2 tbsp
  • Vanilla extract - 1 tsp
  • Baking powder - 1 tsp
  • Coconut oil - 2 tbsp

Tangy sauce

  • Blueberry jam - 2 tbsp
  • Orange juice - 1/3 cup
  • Passionfruit pulp - 2 tbsp

Preparation

  1. Place all the ingredients in a bowl and whisk everything together making sure no lumps are left and the mixture is smooth.

  2. Cover and leave it for at least 10 to 15 minutes.

  3. Heat the pan and add 1/4 cup of batter and quickly swirl it around. Cook just until the edges start to pull away from the bottom of the pan. Flip carefully and cook for another 10-15 seconds.

  4. Cook on medium heat otherwise it might burn. Once done, slide the crepes onto the plate and serve it with drizzle of maple syrup, fresh fruits and Tangy sauce.

  5. For Tangy sauce mix all the ingredients together and make a runny sauce. Drizzle it on top of your crepes.
