Fluffy Vegan Teff Pancakes
Ingredients
- 1 cup teff flour @koro_nl
- 1/2 tbsp baking powder
- 1 tbsp coconut oil
- 1 cup almond milk
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
Toppings
- Toppings of your choice
Preparation
Mix teff flour with cinnamon and baking powder.
Add almond milk, 1 tablespoon melted coconut oil, and vanilla extract.
Optionally add a sweetener.
Heat some oil in a frying pan.
Pour batter into the pan with a spoon to make about 8 round pancakes.
Bake the pancakes.
Make a stack, add your favorite toppings, and serve.
