Fluffy Vegan Teff Pancakes

Ingredients

  • 1 cup teff flour @koro_nl
  • 1/2 tbsp baking powder
  • 1 tbsp coconut oil
  • 1 cup almond milk
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract

Toppings

  • Toppings of your choice

Preparation

  1. Mix teff flour with cinnamon and baking powder.

  2. Add almond milk, 1 tablespoon melted coconut oil, and vanilla extract.

  3. Optionally add a sweetener.

  4. Heat some oil in a frying pan.

  5. Pour batter into the pan with a spoon to make about 8 round pancakes.

  6. Bake the pancakes.

  7. Make a stack, add your favorite toppings, and serve.

Notes

  1. This recipe is vegan, gluten-free, and soy-free, and can be prepared in 15 minutes.
