Vegan Almond Butter and Jelly Pancakes
Ingredients
- 1 mashed banana
- 2 tablespoons ground flaxseed meal
- 1 cup buckwheat flour
- 2 scoops vegan strawberry jam protein powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 tablespoon apple cider vinegar
- 1.5 cups almond milk
Chia jam
- 3/4 cup frozen mixed berries
- 2 tablespoons water
- 2 tablespoons chia seeds
Preparation
Mash the banana in a bowl.
Combine the dry ingredients in another bowl: ground flaxseed meal, buckwheat flour, vegan strawberry jam protein powder, cinnamon, and baking powder.
Add the mashed banana, apple cider vinegar, and almond milk to the dry ingredients and mix until smooth.
Heat a non-stick skillet or griddle over medium heat.
Pour batter onto the skillet to form pancakes and cook until bubbles form, then flip and cook until golden brown.
Chia jam
Place 3/4 cup of frozen mixed berries in a small saucer and heat for 5 minutes with 2 tablespoons of water.
Mash the berries with a fork.
Add 2 tablespoons of chia seeds, mix everything together, and keep on low heat for 5 more minutes.
