Vegan Cinnamon Chocolate Chip Pancakes

Ingredients

  • 170 g all purpose flour
  • 100 g oat flour
  • 15 g baking powder
  • 1 tbsp cinnamon
  • 4 tbsp coconut sugar
  • 360 ml plantbased milk of choice
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp vanilla extract
  • about 50 g chocolate chips or chopped chocolate

Preparation

  1. In a small bowl, mix milk and vinegar.

  2. Let the mixture sit for a few minutes.

  3. In a large bowl, mix the first 5 ingredients.

  4. Pour in the liquid mixture.

  5. Whisk well, then add vanilla extract.

  6. Fold in chocolate chips and let the batter sit for a couple of minutes.

  7. Start cooking pancakes on a nonstick pan for about 1 minute per side.
