Chocolate Chip Gingerbread Vegan Pancakes

Ingredients

  • 190 g all-purpose flour
  • 10 g baking powder
  • 2 tbsp coconut sugar
  • 2 tbsp Unicorn Superfoods Gingerbread latte
  • 300 ml plant-based milk
  • 1+1/2 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 50 g chocolate chips

Preparation

  1. In a small bowl, combine the plant-based milk and apple cider vinegar. Whisk and let the mixture sit for a few minutes.

  2. In a large bowl, mix together the all-purpose flour, baking powder, coconut sugar, Unicorn Superfoods Gingerbread latte mix, and the chocolate chips.

  3. Pour the milk-vinegar mixture and vanilla extract into the dry ingredients. Whisk everything together until well incorporated.

  4. Heat a nonstick pan over medium heat.

  5. Ladle the pancake batter onto the pan to form pancakes. Cook for about 1 minute on each side, until they are golden brown and cooked through.

  6. Repeat the process until you've used up all the batter, making a stack of delicious pancakes.
