Chocolate Chip Gingerbread Vegan Pancakes
Ingredients
- 190 g all-purpose flour
- 10 g baking powder
- 2 tbsp coconut sugar
- 2 tbsp Unicorn Superfoods Gingerbread latte
- 300 ml plant-based milk
- 1+1/2 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 50 g chocolate chips
Preparation
In a small bowl, combine the plant-based milk and apple cider vinegar. Whisk and let the mixture sit for a few minutes.
In a large bowl, mix together the all-purpose flour, baking powder, coconut sugar, Unicorn Superfoods Gingerbread latte mix, and the chocolate chips.
Pour the milk-vinegar mixture and vanilla extract into the dry ingredients. Whisk everything together until well incorporated.
Heat a nonstick pan over medium heat.
Ladle the pancake batter onto the pan to form pancakes. Cook for about 1 minute on each side, until they are golden brown and cooked through.
Repeat the process until you've used up all the batter, making a stack of delicious pancakes.
